so i don’t normally talk about the food i eat, but i made the BEST dinner tonight! Veggie Pitas!
Cook your favorite veggies in a little Extra Virgin Olive Oil – I cooked zucchini, squash, onion, and portobello mushrooms. Season them as you wish.
While your veggies are cooking, whip up some pesto mayo – 1/2 cup light mayo with 2 Tablespoons pesto. Spread pesto mayo in Whole Wheat pitas and then add cooked veggies.
Serve with a cup of fruit and you have a super-yummy and healthy dinner. Woo Hoo!
